Summery Stuffed French Toast

French toast is one of my favourite breakfasts. I love it's versatility and sweetness! This is a twist on my favourite french toast recipe (which includes orange juice as a key ingredient). The citrus form the orange juice and the sweetness from the blueberries make for a delightful, refreshing combination! This recipe is based off of my go to french toast, which is a crowd-pleaser!
Ingredients
1 egg
2 tbsp orange juice
1 tbsp milk (of choice)
1 tsp vanilla
2 slices bread (I used rye)
1/2 cup blueberries (I used frozen)
water
butter (or coconut oil)
Procedure
In a small sauce pan, mix blueberries and 1 tbsp of water. Let simmer for 5-10 minutes until reduced into a thick consistency. Add water as needed. Set aside.
Preheat frying pan over low heat. Mix egg, orange juice, milk, and vanilla.
Dip each side of bread into egg mixture while melting butter on the pan. Fry bread until crispy & browned on each side (2-3 minutes).
Layer bread-blueberry mixture-bread. Top with maple syrup or icing sugar and enjoy!
